So I am no food blogger, but I am an avid lover of cooking.  And if you follow me in Instagram Stories I am sure you would have seen some of my creations. I made myself the simplest lunch yesterday and thought why not share it?

So my Chickpea Insalata can me made for one or as a side for a main meal.

  • Baby gem lettuce hearts
  • Cucumber
  • Can of chickpeas
  • Bocconcini mozzarella balls
  • Seeds ( I used the breakfast mix from WW)
  • Salt
  • Pepper
  • Olive Oil
  • Paprika
  • Garlic flakes
  • Apple cider vinegar (personal preference)

Chickpeas are my all time favourite legume mainly because they are even better roasted. This was super simple to make… oven at 180 degrees, and in a dish I placed the drained chickpeas added olive oil, salt, pepper, paprika and garlic flakes. I like using garlic flakes for a simple dish like this as they give a touch of flavour without overpowering only one area. Those spent about 30 minutes in the oven and then I combined the lot for a pretty summer leafy salad. The serving cloth you may recognize from my dip post. It’s one of my CASA products and this one is slightly more olive green in tone.
